🌈 Happy Pride Month! While we’re always down to wear rainbows, we know that to support our LGBTQ+ community we must do more than display flags and don pins. We must champion their businesses, purchase their products and show up.

WHAT WE’RE COOKING: Mushroom Tart
This week, we’re sharing a Mushroom Tart recipe from our friends at the Floyd Farmers Market.
Ingredients:
1 sheet of puff pastry, thawed
2 cups of locally grown mushrooms, sliced
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves of garlic, minced
1/2 cup Gruyère cheese, grated
Fresh thyme leaves, for garnish
Salt and pepper to taste
Instructions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
Add the sliced mushrooms to the skillet and cook until they have softened and any liquid has evaporated, about 5-6 minutes. Season with salt and pepper to taste.
On a lightly floured surface, roll out the puff pastry sheet to approximately 1/4 inch thickness. Cut the pastry into small squares or circles, depending on your preference.
Place the pastry squares or circles onto the prepared baking sheet. Spoon a generous amount of the mushroom mixture onto each pastry piece, leaving a small border around the edges.
Sprinkle grated Gruyère cheese over the mushroom filling. Garnish each tart with a few fresh thyme leaves.
Bake in the preheated oven for 15-18 minutes, or until the pastry turns golden brown and puffed up.
Remove from the oven and let the tarts cool slightly before serving. These mushroom tarts are delicious both warm and at room temperature.

You are the ice cream sandwich connoisseur of your generation.
Blessed are your floral shorteralls, your deeply pink fanny pack with travel-size lint roller just in case.
Level of splendiferous in your outfit: 200.
Types of invisible pain stemming from adolescent disasters in classrooms, locker rooms, & quite often Toyota Camrys: at least 10,000.
You are not a jigglypuff, not yet a wigglytuff.
Reporters & fathers call your generation “the worst.”
Which really means “queer kids who could go online & learn that queer doesn’t have to mean disaster.”
Or dead.
Instead, queer means, splendiferously, you.
& you means someone who knows that common flavors for ice cream sandwiches in Singapore include red bean, yam, & honeydew.
Your powers are great, are growing.
One day you will create an online personality quiz that also freshens the breath.
The next day you will tell your father, You were wrong to say that I had to change.
To make me promise I would. To make me promise.
& promise.
